Dot’s Russian Pudding

  • 6 Large Eggs (separated)
  • 1 cup Sugar
  • 3 tbsps Cocoa Powder
  • 2 packets Vanilla Instant Pudding
  • 2 cups Cream
  • 2 cups Milk
  • 100 grams Dark Chocolate
  • 10 mls Butter
  • 60 mls Water


  • Preheat the oven to 180 degrees.
  • Base: Beat egg whites until foamy and gradually add sugar. Continue beating until stiff peaks form.
  • Add the yolks and beat until mixed in.
  • Pour mixture into buttered dish and bake for 30 – 35 minutes. It will rise in the oven. When you take it out, it will "collapse". Allow to cool completely before adding filling.
  • Filling: Pour 1 cup of milk, 1 cup of cream and 1 packet of vanilla pudding in a bowl and beat on medium speed for 1 minute.
  • Spread this over the base. Do the same with the 2nd packet of pudding, milk and cream. Spread over the 1st layer of filling.
  • Pour chocolate, butter and water in a bowl. Microwave on high for 30 seconds. Whisk until all combined and melted.
  • Drizzle: Drizzle the chocolate mixture over the top of the pudding. Use a spoon to do this.
  • Don't mix the filling all at once.
  • Serve into a bowl and Enjoy!
